Recipe: Best ever cookies

Volunteer Carrie made these best-selling rainbow cookie jars for last year's Food Festival and they sold out - people even emailed and tweeted us afterwards to say how good they were!

 

Carrie kindly shared the recipe for her delicious rainbow, oat & raisin and chocolate chip cookies below - quick, easy and great for baking with kids - simply the best cookies ever!

The recipes are below and the method follows - it's the same for each recipe. 

 

Rainbow cookies

100g plain flour

50g caster sugar

50g light brown sugar

1tsp baking powder

1tsp bicarbonate of soda

75g chocolate chips

75g Smarties / M&Ms (these can either be mixed in, or saved to go on top of each ball of dough).

50g oats

50g butter

1 egg

 

Oat and Raisin cookies

100g plain flour

50g caster sugar

50g light brown sugar

1tsp baking powder

1tsp bicarbonate of soda

125g raisins

100g oats

1tsp ground nutmeg

1tsp ground cinnamon

50g butter

1 egg

 

Chocolate chip cookies

100g plain flour

50g caster sugar

50g light brown sugar

1tsp baking powder

1tsp bicarbonate of soda

150g chocolate chips

50g oats

50g butter

1 egg

 

Method

  1. Melt butter and leave to cool.

  2. Set your oven to 180 degrees.

  3. Prepare two baking trays or sheets by lining them with baking paper.

  4. Put all dry ingredients into a large mixing bowl. 

  5. Add one lightly beaten egg and the melted butter. 

  6. At this stage, you can also add optional ingredients such as a teaspoon of vanilla, a pinch of salt or the zest of a lemon or orange

  7. Mix well until all the ingredients have combined to make a dough.

  8. Roll into balls - you should get around 10-12 from each batch. Use an ice cream scoop or spoon to help keep them roughly the same size.

  9. Place 5 or 6 balls of dough on each of your prepared baking trays. Space them well apart as they will spread as they cook.

  10. Bake at 180 degrees for 8-10 minutes.
